While we are on our camping vacation, I thought I would leave readers with some helpful information should you decide to be cray cray or brave enough to embark on your own Great Outdoors Adventure.

One of the great things about camping is the food.
Or maybe it's just me that thinks everything tastes better over open flame.

You can keep it simple:  PB&J, ham, or bologna sandwiches, hot dogs, hamburgers and some BBQ chicken and potato salad.   Maybe throw some corn on the cob on the grill.    That might be as complicated as you get.

Pop Tarts for breakfast?
Yeah, I've done it.

But this breakfast, or brunch depending what time you roll out of your tent, is not really that complicated and very tasty.   And is hearty enough to fill you up for a days full of swimming, biking, and hiking.


For this recipe you will need:

Sausages or Canadian bacon
Frozen hash browns, or leftover cooked potatoes, diced
Chopped tomatoes and green onions, if you like
Shredded cheese, any kind.


  • lay sausages or bacon on a double layer of tinfoil that has been lightly sprayed with cooking spray
  •  (meat should be on bottom to take advantage of direct heat from grill)
  • on top of  the meal, add a handful of the hash browns or diced potato, 2-3 eggs, diced tomato, green pepper and onion if you wish
  • salt and pepper to taste  (and any other spices you like -- I like to add a bit of Cajun sometimes)
  • wrap up the packet and place on hot grill for 10-15 minutes - until meat is thoroughly cooked
  • if you like, open the packet and add some shredded cheese on top and place back on top part of grill for a a few minutes to melt cheese
  • once cheese is melted -- serve with fruit and some cottage cheese = Perfect, hearty breakfast
